Take it Away, Jen!

Jen Cerny, a former partner in Stircrazy Catering, began Take It Away, a specialized catering service, in the first year of the pandemic. She offers creative, delicious food that brings clients back again and again.
Jen has generously supported Porridge for Parkinson’s since 2013 and is currently a co-chair of the organizing committee. This year, she contributed delicious sweet and spicy nuts to our November brunch delivery. These are great snacks with drinks— chop them up and add them to a salad.
Sweet and Spicy Nuts
8 cups of mixed unsalted nuts — use any combination of your favourites
1/3 cup maple syrup
1/4 cup light brown sugar, lightly packed
3 tablespoons freshly squeezed orange juice
2 teaspoons ground chipotle powder
4 tablespoons minced fresh rosemary leaves, divided
Kosher salt, canola oil
Instructions
Pre-heat oven to 350F. Generously brush a 9” x 12” baking sheet with canola oil.
In a large bowl, mix together the maple syrup, brown sugar, orange juice, and chipotle powder, along with 2 TBSP oil.
Toss together with nuts, sprinkle with 2 TBSP chopped rosemary and 2 tsp kosher salt.
Bake for 25–30 minutes, giving them a stir halfway through.
Remove from the oven and toss with another 2 TBSP rosemary and 2 tsp salt.
Let cool on pan but keep moving them around every few minutes so they don’t stick!
